For a metal to be considered as stainless steel, it must be composed of no less than 11% of chromium, although nickel does not have to be present in a metal for it to be considered as stainless steel. But for stainless steel which are commonly used for cooking and preparation of meals, the amount of chromium which are found in them usually amounts to 18%, while the nickel content stands at around 8% to 10%.

Another con of having stainless steel cookware is that they are very poor conductors of heat, although there are several types of stainless steel cookware that have a remedy to this problem. Through the placement of aluminum and copper discs which are placed at the bottom part of the pan or sometimes spread all around it, the stainless steel cookware will then become better conductors of heat.

And finally, despite the resistance of stainless steel cookware to heat, excessive amounts of heat will still be able to cause damage on pans and pots which are made of stainless steel, and this damage manifests in the discoloration of stainless steel cookware. Discoloration also occurs when a piece of stainless steel cookware is washed repeatedly over time.
